| As if to
drive out the memory of this great tragedy, the sinister light
of which seems still, after four centuries, to be reflected
from the grim paiace onto the smali pavement beneath, this eating
place of ours was established around 1860 by Pacifico Piperno,
to whom Jewish cooking is much indebted. For more than a hundred
years ít has welcomed gay parties of Romans and tourists
introducing a note of real cheerfulness in contrast with the
sombreness of the historical setting. Originally, that is to
say in the last years of the 18th century, the mews of the Cenci
were situated here, and they let out the stables also to private
peopie. And it was precisely one of these, the Pacifico mentioned
above, who suddenly had the idea of buying the premises to turn
them into a hosteria. It was not a Hostaria with a capital H,
still less a fashionable rendez-vous, but a simple Roman tavern,
plainly furnished with tables and benches, where you could drink
honest wine and enjoy a plate of spaghetti and those fillets
of salt cod and artichokes which are still the pride of this
establishment. Later the place passed to the founder's son Angelo,
and after that to Mario Piperno; after its transformation from
a simple eating place into a trattoria of renown, it remained,
in the early years of this century, the sole and undisputed
"Home of the artichoke cooked the Jewish way", unti!
later other restaurants of the kind flourished in the neighbourhood.
Thus we must ascribe to the house of Piperno the merit of having
established the oldest typical eating place in the Ghetto which,
since 1963, has been in the possession of the Mazzarella family
and where all the year round, in addition to all the other savoury
dishes of the Roman cuisine, we may enjoy the famous, appetising,
peerless artichokes Jewish style. |
